This is my mother's spaghetti and meatballs recipe and still one of my favorite meals. Unlike some recipes that fry the meatballs, making them hard and compact, these meatballs are delicious and fall apart tender.

Ingredients

  1. 1large onion
  2. 1 lbground beef
  3. 2medium sized eggs
  4. 1/2 cupfinely grated Parmesan cheese
  5. 1and 1/2 Tbsp of dried oregano
  6. 1and 1/2 Tbsp of of dried basil
  7. 5turns of ground pepper
  8. 1 tspsalt
  9. 4 slicesbread
  10. Approximately 1/2 of milk
  11. 2 Tbspolive oil
  12. 4large cloves of garlic
  13. 29 oztomato sauce
  14. 13 oztomato paste
  15. 28 ozpetite diced tomatoes
  16. 1 Tbspdried oregano
  17. 1/2 Tbspdried basil
  18. 2bay leaves
  19. 1 Tbspsugar
  20. to tasteSalt
  21. 1 1/2 lbsspaghetti

Cooking Instructions

    Cut onion into half rings and line bottom of large fry pan

  2. 2

    Place ground beef, eggs, cheese, oregano, basil, salt, and pepper into bowl

  3. 3

    Poor milk over bread slices. Squeeze out excess milk from each slice onto remaining slices and crumble into bowl.

    Mix meatball ingredients by hand until well mixed

  5. 5

    Form meatballs into clementine sized balls and place in pan on bed of onions

  6. 6

    Add water to pan until it covers onions and reaches bottom of meatballs.

    Bring water to boil and cover. Steam meatballs for 25 minutes.

    Sautee garlic in olive oil and let pot cool briefly.

    Add tomato sauce, tomato paste, diced tomatoes, oregano, basil, bay leaves, sugar, and salt.

    Use tongs to move a few meatballs and add onions from meatball pan to sauce.

    Simmer sauce until heated through.

    Add meatballs to sauce and stir carefully without breaking meatballs

    Simmer sauce and meatballs for approximately 30 minutes to mingle flavors

    Make spaghetti per package instructions

  15. 15

    Combine and enjoy!
