Break the broccoli into small florets

Cook them in a saucepan of lightly salted boiling water for 3 minutes

Drain them

Plunge them into cold water and set them aside

Melt the butter in a pan over medium heat

Add the onion, rice and chicken

Cook for 5 minutes whilst stirring frequently

Remove the pan from heat

Stir in the flour

Return to the heat

Cook for 2 minutes whilst stirring constantly

Stir in the milk then the stock

Bring to the boil whilst stirring constantly

Reduce the heat

Simmer for 10 minutes

Drain the broccoli

Add to the pan with sweetcorn, salt and pepper

Simmer for a further 5 minutes or until the rice is tender
