Ingredients

  1. 2turkey Italian sausage links
  2. 1/2 cupmozzarella cheese shredded
  3. 1 largeShallot, minced
  4. 2 clovegarlic, minced
  5. 1 eacholive oil cooking spray
  6. 2 eachmini red pepper, finely chopped
  7. 8 largebaby portabella mushrooms

    preheat oven to 350°

  2. 2

    remove stems from mushrooms and reserve. clean mushroom caps.

  3. 3

    mince reserved mushroom stems

  4. 4

    coat skillet with olive oil spray

  5. 5

    preheat skillet over medium heat

  6. 6

    remove sausage from casing and add to skillet along with garlic, Shallot, bell pepper and mushroom stems. cook until meat is browned.

  7. 7

    place cleaned mushroom caps on lightly greased cookie sheet.

  8. 8

    evenly fill each cap with meat mixture

  9. 9

    top each cap with 1T of mozzarella cheese

  10. 10

    bake in oven 8 - 10 minutes, until cheese is melted
