This is my take on a cheesy broccoli casserole, perfect for a holiday meal side dish. It has no condensed cream soups and no velveeta, so I feel better about making it for my family. I use fresh broccoli florets when I make this, but I'm sure frozen could be used too. Or you could also make this with cauliflower. For the topping, you could substitute crushed up Ritz crackers or just panko breadcrumbs instead of the French onions, if you'd like.

Yummy and kid friendly family meal. Quick throw together. You can even do it the night before. Use canned chicken in a pinch, but it's not nearly as good as seasoning and shredding your own.

Easy quick and delicious!

Here is a simplified version of my broccoli cheese casserole that is not missing any flavor! Super cheesy, tons of flavor and half the work. This is still gluten free but not so dairy sensitive. This can be made the day before serving but don't reheat too soon the rice can get mushy. Cooking the morning of is best if possible. Even if the rice gets mushy it still tastes great just doesn't look as pretty.

Its great for a big family, and doesnt take hours to cook(:
