drain grated cucumber allowing the liquids to run out.

mix garlic and salt into drained cucumber. Combine with yogurt. Allow to set overnight in the fridge.

Strain through a colander to remove cucumber and garlic solids.

Place sauce in coffee filter to strain out water. If you don't have one, place in a container and to get desired consistency, place a paper towel folded over tzatziki. Paper will absorb the water leaving a thicker sauce. Remove wet paper and replace with a new one until desired consistency is reached.
