This recipe makes 12 cupcakes or 18 smaller fairy cakes.

preheat oven to gas mark 5/190C/375F and line cupcake tin with cupcake cases.

cream the butter and sugar together until light and fluffy.

add beaten eggs and vanilla extract, mix well.

sift flour in and fold into the mixture. Stir in the white chocolate chips.

the mixture should have a soft, dropping consistency. If it feels dry add a tablespoon of milk.

spoon mixture into cases where each case is two-thirds full.

bake for 12-20 mins until a light golden brown.

leave to cool before decorating
