Tumeric can be over powering so I use cardamon to tone it down a little. We love eating this rice with vegetable coconut curry.
Steps

Wash rice and set aside

Heat the oil in a cooking pot and add the tumeric and cardamon pods. Stir for 1 minute.

Reduce the heat and carefully add the washed rice and salt. Stir together to coat the spices and the rice. Continue to do this for 10 minutes.

Carefully add the hot water, stir and let cook uncovered until liquid has dried up. Preheat oven to 100 degrees

Cover the top with foil and then with the lid and let simmer for 5 minutes.

After 5 minutes switch off the rice and transfer the pot to the oven for 20 minutes. Reduce the oven temperature to 60 degrees or warm until ready to serve.

Enjoy the rice with an accompaniment of your choice.
