Ingredients

  1. Soup
  2. 2 tbspvegetable oil
  3. 2 largeonions
  4. 1/2 cupfresh ginger pieces
  5. 3 largecarrots
  6. 1/4celery
  7. 1 smallchilli
  8. 1 1/2leek
  9. 6 clovegarlic
  10. 1/2 cupporree
  11. 1/2 bunchfresh parsley
  12. 6lemon grass sticks
  13. 3 tspsalt
  14. 1chicken with skin and bones
  15. 2 tbspsambal olek
  16. Finishing Touch
  17. 1/2 bunchfresh corriander leaves
  18. 1 1/2 cupcoconut milk
  19. 1 cupcooked soup noudles per serving

  1. 1

    Take a big pot and heat some vegetable oil.

  2. 2

    peel / clean the vegetables and the chicken (if you don't peel the onion, the soup will get a nice golden colour)..Cut everything into big chunks.

  3. 3

    put all soup ingrediences into the pot and roast them.

  4. 4

    fill water in the pot until everything is covered. Cover the pot and let it simmer for at least 60 min (the longer the better)

  5. 5

    Filter the soup - Soup comes inro a new pot, the solid rest stays in the filter.

  6. 6

    Find the carrots and the chicken meat in the filter, cut them and put them back into the soup.

  7. 7

    Now the soup is basically done and can be refrigerated.

  8. 8

    Before you serve it.. heat up only what you are actually going to eat (the rest stays in the fridge) - turn off stove. Then add the last ingrediences..and enjoy!!
