Heat oil or butter in a pan and add garlic, saute for a minute

Then add onion, saute for 2 minutes, on low heat

Now add tomato puree and cook until the extra moisture evaporates

Then add vegetables stock and mix well

Add all the vegetables and macaroni, mix well

Cook on low heat until the macaroni becomes soft and completely cooked

Now add salt and black eyed beans

Then add oregano, italian seasoning, chilli flakes and tomato chilli sauce, mix nicely

Let it simmer for a minute, the soup is ready to serve

Take it out in a serving bowl and garnish with grated cheese and chopped coriander

You can have it as a full meal as it is full of vegetables and macaroni
