Tunisian Oven Egg Tajine
Hot out of the oven... What an aroma!!!

Peal and dice up the potatoes. You can choose how big or small you leave them. Just keep in mind you need to fry them...

Fry the potatoes in oil until they are completely cooked and crunchy. While baking you can make the rest in order to save time.

Whisk all eggs together and season with salt and pepper. Add the onion in small dices, the green peas and the cheese. It might look consistant but the cheese will melt later on so don't worry.

Preheat the oven at about 190°C.

Cut the cooked chicken slices (for a sandwich) into small dices and add to the mixture.

Now... Put the potatoes on the bottom of a glass oven scale and add the mixture to it. Make sure you flatten it with a spoon to get nice slices afterwards.

Bake about 40 minutes... Actually until the egg is cooked. Wait until it's not smoking hot anymore and endulge yourself...

Great with a green salad and a piece of ovenfresh and crusty bread.
