Ingredients

  1. 1/4 cupeach of grated carrot, shredded cabbage, finely chopped french beans, finely chopped onion
  2. 1 tspfinely chopped garlic
  3. 1 tspfinely chopped ginger
  4. 2 tspfinely chopped celery leaves
  5. 4-5 teaspooncorn starch dissolved in 2 tablespoon water (for a slight thicker consistency in the soup)
  6. 3/4 tspblack pepper powder
  7. 3/4 tspchilli sauce
  8. 3 tspsoy sauce
  9. 2 tspvinegar (I have taken apple Cider vinegar)
  10. 2.5 cupswater or veg stock
  11. 1 tbspOlive oil
  12. 1 tspsugar to adjust the sour
  13. as requiredsalt

Steps

  1. 1

    First rinse and shred the cabbage and french beans.

  2. 2

    Peel and grate the carrots. chop the onions, ginger and garlic.

  3. 3

    Heat 1 tbsp Olive oil in a pan Add finely chopped onion, ginger and garlic. Stir and saute on a medium flame for 2 minutes.

  4. 4

    Then add the finely chopped french beans, stir fry on a medium to high flame.Add carrots, cabbage and celery.

  5. 5

    Meanwhile make a paste of corn starch and water. keep aside.
    Stir fry these veggies on a high flame for 2 to 3 minutes.

    Add water or veg stock. Cook well. Add soy sauce and stir. Then season with salt. Bring the soup to a simmer on medium flame.

  7. 7

    Mix the corn starch paste and add it to the soup. Stir again very well. Allow the soup to thicken on a low to medium flame.

  8. 8

    When the soup has thickened, add black pepper, vinegar and sugar.
    Give a final stir. switch off the flame.
    I garnished the veg hot and sour soup with butter.

    Note:
    keep a check on the amount of salt as soy sauce already has a lot of salt. I added just about one-fourth teaspoon first and adjusted towards the end.
