Ingredients

  • 200 gNoodles
  • 4-5 cupsWater
  • 2 teaspoonsGinger finely chopped
  • 2 teaspoonsGarlic finely chopped
  • 1 tablespoonsCelery finely chopped
  • 1/2 cupOnion sliced
  • 1/2 cupCarrot finely Julien cut
  • 1/2 cupCapsicum finely julien cut
  • 1/2 cupCabbage finely julien cut
  • 1/3 cupMushrooms finely chopped
  • 1 1/2 tablespoonsSoy sauce
  • 1 1/2 tablespoonsTomato Ketchup
  • 1 1/2 tablespoonsChilli sauce
  • 1 1/2 teaspoonWhite distilled vinegar
  • to tasteSalt
  • 1/4 teaspoonBlack pepper powder
  • 3 tablespoonsSpring onion chopped

Steps

  1. 1

    Heat the oil in a pan on medium heat.

  2. 2

    Once hot add chopped ginger, garlic and celery. Stir and saute for 30-40 seconds. DO NOT brown the garlic.

    Now add sliced onions and mix. Cook till onions get soft.

  4. 4

    Then add all the veggies (carrot, capsicum, cabbage, mushroom). Mix well and cook for 2-3 minutes only. Veggies are just soft, do not overcook them.

  5. 5

    Now add soy sauce, ketchup, chilli sauce and vinegar. Mix well and let the sauce get heated through.

  6. 6

    At this time add salt and pepper to taste.

  7. 7

    Add boiled noodles and spring onion greens

  8. 8

    Toss everything together till noodles is coated with sauce mixture well. Once noodles get heated through, turn off the stove.

  9. 9

    Serve.. hot.. with some Chinese cut onnion / round thin cut onnion..
