  • 2 tbspfruit peel
  • 2 tbspmaraschino cherries
  • 2 tbspraisins
  • 2 tbspcurrants
  • 2 tbspcoffee sugar crystals
  • 2 tbspbrandy
  • 4 cupcrushed ginger nuts
  • 1egg white
  • 1/2 cupcream

    Soak fruit in brandy overnight

  2. 2

    Stiffly beat egg white and whip cream, then fold together

  3. 3

    Gently fold all other ingredients into egg and cream mix

  4. 4

    Pour into freezer safe mould and freeze
