Ingredients

  1. 300 grams(12oz) self raising flour
  2. 5 ml(1tsp) mixed spice
  3. 100 grams(4 oz) ground almonds
  4. 200 grams(8 oz) butter
  5. 200 grams(8oz) castor sugar
  6. 4eggs beaten with 125 mls (8 tbsp) milk or (1/2 milk and brandi )
  7. 200 grams(8 oz) currants
  8. 200 grams(8 oz) sultanas
  9. 200 grams(8 oz) raisins
  10. 100 grams(4 oz ) halved glacé cherries
  11. 100 grams(4 oz) cut mixed peel

Cooking Instructions

    soak the currents, sultanas, raisins, halved glacè cherries and mixed peel in 1/2 cup (200mls) of good Brandi ..let it soak for at least 4/6 weeks and top up weekly before Christmas if necessary

    Sieve together flour , spice and ground almonds

    Cream butter and sugar, stir in flour mixture and eggs with milk ( alternately, a little at a time)

    lastly add fruit mix thoroughly

    place mixture in a greased and lined 23cm x 7cm deep round cake tin

  6. 6

    bake in slow oven, 150c-300f for about 41/2 hours ...after 31/2 check cake by inserting a knife or skewer until it comes out clean
