Date Palm Jaggery Sandesh

#Jaggery
By Madhumita Mishra
This is a traditional Bangali sweet with Date Palm Jaggery. Very easy to prepare with less ingredients. It is made in several occasions as people of West Bengal love to eat Sandesh. Gur Sandesh mostly being made in winter. I have not used Cardamon powder just to retain the sweet smell of Khajoor Gur. The Sandesh is soooo yummy and tasty.

Steps
- 1
Boil the milk in a heavy bottomed pan over medium heat. Once the milk starts boiling, lower the flame. Pour the lime juice and stir in. Milk will start cuddling and change into chenna (cottage cheese)
- 2
Switch off the flame and allow to cool down.
- 3
Pour mixture on a strainer or soft cotton cloth and let the water(gree whey) drain away for 30-40 minutes
- 4
Check that the chenna should not get too dry.
- 5
Put the chenna on bowl and knead with your palm for about 10 to 12 minutes.
- 6
Add Nolen Gur (Date Palm Jaggery) and knead again until jaggery is totally mixed with the chenna.
- 7
Put a nonstick pan on low heat, add the kneaded chenna. Cook the chenna at low heat by stirring it continuously with a spatula for about 4 to 5 minutes.
- 8
Brush the inside of the molds with little ghee Take out the warm Sandesh and shape with molds.
- 9
If you don't have any molds just toss into balls. Serve warm or at room temperature.
