preheat oven to 325°F

pull the neck and giblets out of the cavity

ditch the liver and save the rest of the giblets for the gravey

place breat side up in a roasting pan
- 5
tent the foil and roast for 2 hours (10 - 12 pound turkey; add an extra 15 minutes per pound for larger birds)
- 6
remove the foil, baste with drippings
- 7
turn heat up to 425°F
- 8
roast another hour or until thighs registers 165°F
