Ingredients

8 largepotatoes, cut in 1 inch wedges
4 tspminced garlic
1/2 cupolive oil
1 cupwater
1 tsporegano
1 1/2lemons, juiced
1salt and pepper

Heat oven to 425°F.

Put all in large baking pan, seasoning generously with salt and pepper, and toss.

Bake uncovered, 40 min, until golden brown, then toss and season with salt and pepper again.

Add an extra 1/2 cup water if pan seems to be getting dry, and return to oven to contnue browning, about 30 min.
