3/4 cupsugar
3/4 cupbrown sugar
2eggs
2 tspvanilla
2 cupall purpose flower
1/3 cupunsweetened cocoa powder
1/2 tspbaking powder
1/4 tspsalt
1 cupsemisweet chocolate pieces

Steps

Melt butter and 1/2 cup chocolate pieces. Stir in coffee crystals. Cool 5 minutes. Stir in sugars, eggs and vanilla.

Combine flour, cocoa, baking powder and salt. Stir into chocolate and coffee mixture. Add 1 cup chocolate pieces.

Place by tablespoon on lightly greased cookie sheet.

Bake at 350°F 12 - 15 minutes

I have had this recipe in my cookie binder forever and I am going to make them today for the first time. I am glad that I saw @cook_9595546 photo and comment. I wasn't sure if I should refrigerate them prior to baking or not and I am also leaving out the additional chocolate chips. Looking forward to being able to add this to my Christmas cookie rotation next year as well.
