Place fatback in pot, and let fry out very well

Rinse fish, and remove skin if necessary

Cut fish into squares about two inches

Add fish to fat.

Add sliced onions on top of fish

Cover fish and onions with potato slices.

Season with pepper

Add boiling water

Cook slowly until potatoes and fish are tender, about a half hour
