
Bacon cheddar sweet potato skins

preheat oven to 400°F. coat potatoes with oil, place on baking sheet. bake 50 min

cut length wise, scoop out flesh. leaving 1/4" in shell. place flesh in a bowl and mash.

over medium high heat, cook onions (chopped) and garlic (chopped) in olive oil for 4mins.

cook bacon (chopped) until crunchy. stir into onion and garlic mixture

stir onions, garlic, and bacon mixture into potato flesh. season with salt and pepper.

fill potato shells with mixture; cut into thirds. top with cheddar cheese
- 7
bake for additional 10min or until heated. top with sour cream and green scallions.
