A tasty snack, the bitterness of Chicory is balanced by the zingy salad dressing that enhances the fish.

Start cooking the fish fingers under the grill and gather the ingredients for the salad

Chop the lime into quarters and squeeze the Juice into a salad bowl for the dressing.

Add the vinegar, salt, mustard, olive oil and a little freshly ground pepper, mix with a fork.

Break the Chicory into leaves, dress and arrange on a plate
- 5
Chop the spring onions, dress and scatter on top of the Chicory
- 6
Cut the cucumber into slices lengthwise
- 7
Arrange the cucumber around the edge of the plate, top with fish fingers and add a little black pepper.
