Preheat oven to 350°F

Peel then cut potato into small pieces

Cut sausages into small pieces, cook in skillet until they start to brown

Add potatoes, cook until done

Remove from heat, add spinach and set aside

Whisk eggs in separate bowl until well combined

Get a medium-small cupcake pan and spray well with non stick spray or shortening

Add cheese, then spoon in skillet mixture till almost full. Repeat until all cups are filled

Add beaten eggs till they're covering mixture , then shake and tap the pan lightly

Add remaining cheese to the tops
