Peel and wash the carrots

Cut into neat,even pieces

Place into the pan with little salt,a pinch of sugar and the butter.Barely cover with water.

Cover with buttered paper and allow to boil steadily in order to evaporate all the water.

When the water has evaporated check that the carrots are cooked.

Toss the carrots 1-2 min in order to give them a glaze.
- 7
Serve sprinkled with chopped parsley.
