Ingredients

  1. Meats and Lipids
  2. 1 1/2 lb80/20 ground chuck
  3. 1/2 lbground pork
  4. 1unsalted sweet cream butter
  5. Aromatics
  6. 1 largeyellow onion
  7. 1 mediumshallot
  8. 3 clovegarlic
  9. 1 eachcelery stalk
  10. Vegetables
  11. 2 smallcarrots
  12. 1 cansweet corn
  13. Starch
  14. 6 cupcreamy mashed potatoes (any preparation)
  15. 2 boxcorn bread mix (prepared 2 hours ahead of time, cooled and crumbed)
  16. 1 tbspflour (if needed to thicken meat gravy)
  17. Seasonings, Spices, Etc.
  18. 1 canbeef broth or consume
  19. 2 tbspWorcestershire sauce
  20. 1bay leaf
  21. 1 tspfresh ground black peppercorns
  22. 1/2 tspkosher or sea salt
  23. 1 tspbasil
  24. 2 tspground thyme
  25. 1 tbspdried tarragon
  26. 1 1/2 cupshredded mild cheddar cheese
  27. 1 tbspdried parsley

Cooking Instructions

    PREPARE corn bread per box instructions. Allow to cool and crumble

  2. 2

    FINELY CHOP all aromatics and carrots

  3. 3

    PREPARE creamy mash potatoes...(if making from scratch) crush tarragon and stir into mash

  4. 4

    SWEAT carrots and celery in butter over med-low heat in a large sauce pan

  5. 5

    ADD remaining aromatics and sweat until onions are translucent. SEASON with a pinch of kosher salt and freshly cracked peppercorns

  6. 6

    ADD all meat and BROWN over medium heat

  7. 7

    ADD broth or consume and Worcestershire sauce

  8. 8

    ADD basil, thyme, and bay leaf

    SIMMER until reduced to gravy thickness. Stir in a pinch of flour if needed

    Prepare creamy mash potatoes...(if using instant) crush some tarragon between your fingers stirring it into the mash

  11. 11

    Line large casserole dish with butter and press corn bread crumbs into the dish

  12. 12

    Remove bay leaf spread meat gravy over corn bread crust

  13. 13

    Drain corn and spread over meat gravy

  14. 14

    Carefully spread mash over corn locking in all lower layers (if not juices bubble up over the mash)

    Bake at 350 for 25 minutes

    Remove from oven and preheat broiler

  17. 17

    Evenly spread cheese over mash and broil until cheese is browned and bubbles

  18. 18

    Allow to cool for 10 minutes, sprinkle with parsley and serve!
