Ingredients

8 servings
  • 2 cupthinly sliced celery
  • 2 cupfinely chopped onion
  • 14 1/2 ozcan of no salt added diced tomatoes undrained
  • 2 cupreduced sodium chicken broth
  • 1/3 cuptomato paste
  • 1 1/2 tspsalt free cajun seasoning
  • 2 cloveminced garlic
  • 1/2 tspsalt
  • 1 lbskinless boneless chicken breast halves or thighs cut into 3/4 inch pieces
  • 1 1/2 cupquick cooking brown rice
  • 3/4 cupchopped green, red and or yellow sweet pepper
  • 8 ozcooked, peeled and deveined shrimp, tails removed
  • 2 tbspsnipped fresh parsley
  • 1Salt and ground black pepper
  • 1Celery leaves (optional)
  • 1Bottled hot pepper sauce (optional)

Steps

6 hours 25 mins
  1. 1

    Stir together celery, onion, undrained tomatoes, broth, tomato paste, Cajun seasoning, garlic and 1/2 teaspoon salt into slow cooker

  2. 2

    Stir in chicken

  3. 3

    Cover and cook on low heat for 5 to 6 hours

  4. 4

    Turn to high and stir in uncooked rice and sweet pepper

  5. 5

    Cover and cook 30 mins more

  6. 6

    Stir in shrimp and parsley and season to taste with additional salt and ground black pepper

  7. 7

    Garnish each serving with celery leaves and splash with bottled hot pepper sauce
