Ingredients

  1. legumes
  2. 1 1/4 kgchickpeas
  3. fruits
  4. 1 kgtomatoes, quartered
  5. vegetables
  6. 2green bell peppers, chopped
  7. spices and base ingredients
  8. 2 headgarlic, minced
  9. 3onions, chopped
  10. 1 smallginger, chopped
  11. 1 bunchcoriander, chopped
  12. 1 bunchparsley, chopped
  13. 3 tbspmirin (optional)
  14. 3 tbspchana masala spice mix
  15. 3 tbsppaprika
  16. 2 tbspwhole black peppercorns
  17. 5 smalldried chilies, crushed
  18. 2/3 cupolive oil
  19. 1salt, to taste
  20. 1ground black pepper, to taste

Steps

  1. 1

    sauté garlic, onion, bell pepper, ginger and coriander in olive oil, adding pepper, salt & paprika (PSP) in a deep saucepan

  2. 2

    once onions become soft, add mirin and wait until alcohol is evaporated.

  3. 3

    add tomatoes, whole black peppercorns, and spice mix.

  4. 4

    once tomatoes liquefy, add dried chilies and chickpeas.

  5. 5

    let mixture boil, then set on low to low medium heat, and let simmer for 20-40 minutes.

  6. 6

    add salt & pepper to taste along with parsley; serve with basmati rice or roti, share, and make merry!
