Ingredients

4 servings
  • vegetables
  • 7Chinese eggplants
  • 1spring onion, finely chopped
  • eggs and dairy
  • 6 largeeggs
  • spices and base ingredients
  • 2/3 cupolive oil
  • 15 spice powder (optional), to taste
  • 1salt, to taste
  • 1ground black pepper, to taste

Steps

30 mins
  1. 1

    boil or grill eggplants until they turn soft.

  2. 2

    beat eggs along with salt, pepper, spring onions, and 5 spice

  3. 3

    once eggplants are soft, peel off skin and mash with fork until they reach tge desired flattened shape.

  4. 4

    soak both sides of eggplant in beaten egg mixture.

  5. 5

    heat olive oil in a frying pan and fry battered eggplants on both sides.

  6. 6

    serve with ketchup and rice. share, make merry, and have fun!
