Ingredients

  • 1 canbuttermilk buscuits
  • 3 cupshredded pepperjack cheese
  • 3 tbspextra virgin olive oil
  • 1 cupthinly sliced poblano chile pepper
  • 3 cupshredded deli rotisserie chicken
  • 2 tbspfajita seasoning
  • 18 oztomato sauce

Steps

  1. 1

    heat oven to 350°.

  2. 2

    place busicuts on lg ungreased cookie sheet.

  3. 3

    bake 10-12 mins or until light golden brown.

  4. 4

    sprinkle each buscuit with 1tbsp cheese; press in lightly.

  5. 5

    lightly sprinkle with 1/4 tsp salt and pepper.

  6. 6

    bake 2-3 mins longer or til cheese is melted and biscuits are golden brown.

  7. 7

    meanwhile, in 10 inch nonstick skillet, heat over medium high heat til hot.

  8. 8

    add sliced pepper; cook 3 mins our til softened.

  9. 9

    stir in chicken, fajita seasoning, and tomato sauce.

  10. 10

    reduce heat; simmer 10 mins, sitting occasionally.

  11. 11

    split biscuits; soon hot chicken mixture on bottom half of each biscuit.

  12. 12

    tip with about 1/3 cup remaining cheese and biscuit tops.
