in a small bowl, beat together egg yolks, egg, milk

in medium bowl whisk together flour, nutmeg, salt, and pepper.

add egg mixture to flour mixture and mix with wooden spoon, untill well blended

refrigerate at leaste one hour, over night is best

bring large pot of salted water to a boil
- 6
prepare a bowl of ice water
- 7
place spazlemaker or large holed colander over boiling water.

force mixture through colander into the water
- 9
cook untill spatzle floats(4-5minutes)
- 10
transfer spatzle to ice water with a slotted spoon
