combine water, sugar, salt and sprinkle yeast on top

allow sit 5 minutes or until mixture begins to foam

add flour, butter and, using dough hook attachment, mix until dough is smooth and pulls away from sides of bowl

remove dough from bowl, clean bowl and oil it well

return dough to bowl, cover with plastic, and sit in warm place for 1 hour

preheat oven to 450

line 2 oven sheets with parchment paper and brush with oil

bring the 10 cups water and baking soda to a boil in 8qt sauce pan.

divide and roll dough into 24" ropes. tie in pretzel knot

place pretzels in h2o one at a time for 30sec. place on pan and brush with egg, then sprinkle salt

bake for 15min then cool on rack
