It's the best! I always make extra rice when we have rice for a meal, just so I can make this with the leftovers :). Recipe is from my moms friend. (I recommend using jasmine rice)

It's the best! I always make extra rice when we have rice for a meal, just so I can make this with the leftovers :). Recipe is from my moms friend. (I recommend using jasmine rice)

Beat egg yolks with 1/2 cup milk, set aside. Combine rice, remaining milk, sugar, salt and butter.

Cook in large saucepan, over medium heat until thick and creamy (about 15 minutes) stirring frequently.

Pour egg/milk mixture I've rice mixture and cook 2-3 minutes longer stirring constantly.

Remove from heat. Add vanilla and sprinkle with cinnamon. Mix well. Pour into serving dish and lightly sprinkle with cinnamon again.
