In a small saucepan whisk first 4 ingredients together. Bring to a boil, then reduce heat and simmer for 2 minutes or until thickened, stirring frequently.

Meanwhile, sauté veggies and chicken until veggies are tender crisp.

Cook ramen noodles

Drain water

Mix sauce, Ramen, and veggie mixture together.

Top each serving with 1 TBS of the peanuts

I got this recipe from Parents Magazine. It is supposed to be for a kids lunch, but I liked it so much I eat the second serving for my lunch. I tweaked the recipe a bit to add some flavor. Enjoy!
