Ingredients

  1. 1/2 cupUnsalted chicken stock
  2. 2 tbspPeanut butter
  3. 1 tbspReduced sodium soy sauce
  4. 1 dashGinger, Curry Powder, Garlic powder and Red pepper flakes
  5. 2 tbspsliced red pepper
  6. 2 tbspsliced onions
  7. 2 tbsphalved sugar snap peas
  8. 2 smallchicken breasts, cooked, optional
  9. 1 packagesRamen Noodles, discard seasoning packet
  10. 2 tbspchopped peanuts

  1. 1

    In a small saucepan whisk first 4 ingredients together. Bring to a boil, then reduce heat and simmer for 2 minutes or until thickened, stirring frequently.

    Meanwhile, sauté veggies and chicken until veggies are tender crisp.

    Cook ramen noodles

  4. 4

    Drain water

  5. 5

    Mix sauce, Ramen, and veggie mixture together.

  6. 6

    Top each serving with 1 TBS of the peanuts

  7. 7

    I got this recipe from Parents Magazine. It is supposed to be for a kids lunch, but I liked it so much I eat the second serving for my lunch. I tweaked the recipe a bit to add some flavor. Enjoy!
