Ingredients

2 canShoepeg corn
1 canPinto beans
1 canBlack eye peas
1 cupOnion
1 cupGreen pepper
1 cupRed pepper
1 cupVegetable oil
1/4 cupSugar
3/4 cupRed wine vinegar

Steps

Rinse and drain pinto beans and black eye peas. Add beans and corn to bowl.

Dice peppers and onion. Add to bowl.

Add vegetable oil, sugar and vinegar to bowl. Mix well.

Refrigerate for at least 1 hour. Serve with tortilla chips.
