Ingredients

  1. topping
  2. 1/2 cupBrown Sugar
  3. 1/2 cupRolled Oats
  4. 1/2 cupChopped Pecans
  5. 1/4 cupAll-Purpose Flour
  6. 1/2 tspGround Cinnamon
  7. 3 tbspButter (melted)
  8. filling
  9. 2 largeEggs
  10. 1/2 cupGranulated Sugar
  11. 1 tspVanilla Extract
  12. 1/2 tspSalt
  13. 3 cupMashed Sweet Potatoes
  14. 1/3 cupHalf-and-Half (fat free)
  15. 2 tbspButter (melted)

Steps

  1. 1

    For the topping; stir cinnamon, pecans, flour, oats, and sugar together. Add butter until combined and set aside

  2. 2

    For the filling; beat the eggs together in a medium bowl. Stir in vanilla, sugar, and salt until combined. Add and mix the mashed sweet potatoes and half-and-half

  3. 3

    Pour filling into a greased casserole dish (about 2 qt size)

  4. 4

    Sprinkle topping over the filling.

  5. 5

    Bake at 350°F for 25-35 minutes. Let cool before serving
