  • 1Sweet Potatoes, cubed
  • 1/3 packagesSalsa Verde
  • 1/2onion, chopped
  • 1/2green pepper, chopped
  • 1/2 packagesMushrooms, chopped
  • 1 tbspchili powder
  • 1/2 tbspground cumin
  • 1 canBlack Beans, drained
  • 1 cupCheddar Cheese
  • 12Burrito Tortillas
  • 12Eggs
  • 2 clovegarlic

  1. 1

    Heat oil over medium high heat in a large dry pan.

  2. 2

    Cook sweet potatoes, onion, and peppers until soft and have a little color on them. Add spices and garlic, cook another minute.

  3. 3

    Wisk eggs. Turn heat to low. Pour in Eggs and mix. Cook, stirring occasionally until eggs are mostly cooked.

  4. 4

    Add in Salsa, Cheese, and beans and stir until combined and melted.

  5. 5

    If you are freezing, take off heat and let cool, 20-30 minutes. Otherwise continue to step 6.

  6. 6

    Add 1/2 to 3/4 cup of filling to each burrito. and roll.

  7. 7

    If you are freezing, roll in plastic wrap, store in zip lock bags and freeze.
