Ingredients

20 minutes
2 servings
  • 1 cuprolled oats
  • 1small onion finely chopped
  • 2green chillies slit
  • 1 tbspfinely chopped capsicum
  • 1 tbspfinely chopped carrot
  • 1 tbspfinely chopped beans
  • 1 tsplemon juice
  • 1/2 tspsugar
  • to tasteSalt
  • 1 1/2 cupwater
  • 1/2 tspgrated ginger
  • 2 tspoil
  • 1/2 tspmustard seeds
  • 2 pinchheeng (optional)
  • 5-6curry leaves
  • 1/2 tspbengal gram/chana dal
  • 1/2 tspsplit black gram/urad dal
  • Chopped coriander leaves for garnishing

Steps

20 minutes
  1. 1

    Heat a pan on low medium heat. Add rolled oats and dry roast till it get slightly brown in colour. Keep aside.

  2. 2

    In the same pan heat oil. Add mustard seeds, chana dal and urad dal. Fry till mustard seeds splitters.

  3. 3

    Now add heeng, onion, curry leaves, green chillies and ginger. Saute till onion turns light brown in colour.

  4. 4

    Meanwhile in another pan, add 1 1/2 cup water, carrots, capsicum and beans. Let it boil for 2-3 minutes.

  5. 5

    Now add roasted oats to the tempering and mix it well. Then add boiled veggies along with water, keep stirring.

  6. 6

    Add salt, mix well. Cover with a lid and cook for 3-4 minutes on low flame.

  7. 7

    Later add lemon juice, sugar and coriander leaves.

  8. 8

    Enjoy vegetable oats upma when hot.

    You can add vegetables of your choice or can skip veggies and just make it as plain upma.

    If you want you can add roasted cashews and fresh grated coconut.
