
Black Bean and Corn Salsa

Empty can of black beans into colander, rinse and drain.

Put corn in a bowl covered with plastic wrap and microwave on high for 3 minutes

Dice bell peppers, red onion and finely chop the cilantro.

Whisk the olive oil and red wine vinegar together in a small bowl

Combine all ingredients into a largr bowl and mix well. Salt and pepper to taste and serve.
