Cook rice as directed. Cut beef with grain into small pieces/cubes.

Cut tortillas in half and then in strips. Heat 12-inch nonstick skillet over medium-high heat. Add oil and rotate in pan. Cook tortilla strips in oil 1-2 mins each side until golden brown and crispy. Add salt and seasoning for added flavor (I like ms. Dash's fiesta lime seasoning and garlic salt). Drain on paper towels.

Add beef to skillet, stir-fry over medium-high heat 4-5 mins or until beef is brown. Remove beef from skillet.

Add bell pepper, onion, and corn to skillet; stir-fry 1 min. Cover and cook 2-3 mins stirring twice until crisp-tender.

Stir in beef, salsa, lime juice, chili sauce, and cumin. Cook 2-3 mins, stirring occasionally until hot. Stir in cilantro.

Divide rice into 4 bowls. Top with beef mixture and tortilla strips.
