I saw a Squash Panini recipe on a website and I decided to change a little bit...everything. :) This is what I came up with. I hope you like it. If you try it don't forget to review and share your opinions with me. Don't forget: eat your veggies!

I saw a Squash Panini recipe on a website and I decided to change a little bit...everything. :) This is what I came up with. I hope you like it. If you try it don't forget to review and share your opinions with me. Don't forget: eat your veggies!

Preheat the oven to 200°C

Brush the pumpkin slices with olive oil. Place them in the oven on tin foil. Season with salt and pepper. Bake 35 minutes or until they're tender. Don't forget to turn them after 15/20 minutes.

Preheat the bread.
- 4
Brush 4 slices of bread with olive oil. These will be the top of your sandwich. On the other 4 slices put the pumpkin and the soft cheese. Top with the other slices of bread and add the dried basil. Grill for about 10 minutes.
