A Scrumptious Open Sandwich

I have tried to recreate the sandwich, that I always have in my favorite sandwich shop. I have loved that shop for years but now there is no need to go back.

It is very easy to make. Adjust the amount of wasabi to your taste. I used a slice of a bread loaf, but you can use bagels, pain de campagne or rye bread. Recipe by Musashi

Ingredients

1 serving
  • 1 sliceSliced bread
  • 4Prawns
  • 1to 2 leaves Lettuce
  • 1/4Celery
  • 2 sliceTomato
  • 1/4Avocado
  • 1few drops for the bread Olive oil
  • 1few drops for the avocado Lemon juice
  • 1/2 tbspSoy sauce
  • 1/2 tspOlive oil
  • 1/4 tspWasabi
  • (Preparation for prawns)
  • 1 tspWhite wine
  • 1 tspKatakuriko

Steps

  1. 1

    Peel the shells and tails and devein the prawns. Mix the prawns with the preparation ingredients and rinse.

  2. 2

    Bring some water (not listed in the ingredients) to a boil in a small sauce pan and poach the prawns for 2 to 3 minutes. Drain and rinse.

  3. 3

    Tear the lettuce and rinse. Pat dry with kitchen paper. Slice the celery diagonally (remove the fibre if necessary).

  4. 4

    Slice the tomato and avocado, and sprinkle lemon juice over the avocado. Combine in a small bowl.

  5. 5

    Toast the bread. Drizzle a few drops of olive oil over the bread after toasting.

  6. 6

    Place the lettuce → the celery → the tomato on top of 5. Put the prepared prawns in the centre and arrange the avocado around them. Drizzle over top and serve.

  7. 7

    If you are hungry, add another slice of bread to make a proper sandwich. It may be messy when you eat it, but have a try.

  8. 8

    Use bread of you choice. I used a slice from a normal loaf of bread but I like pain de campagne best for this open sandwich.
