1 cupquinoa
2 tbspolive oil
2 smallsweet potatoes
10 ozmushrooms
2 clovegarlic
1 bunchkale
3/4 cupWhite wine
1/4 cupgrated parmesan cheese

place quinoa and 2 cups water in small saucepan. bring to boil. reduce heat and simmer. 15 minutes covered

heat oil in large skillet. medium heat.

add sweet potatoes and mushrooms. toss occasionally. 5 minutes

stir in garlic
5

add kale wine salt and pepper. 10 minutes.
