We often have soup for lunch in the winter and this is a family favourite. Cheap, healthy and nutritious.
Steps

Peel the carrots and potatoes and chop into chunks.

Wash and thinly slice the leeks.
- 3
Melt the butter in the oil and add chopped vegetables.
- 4
Fry for a couple of minutes.
- 5
Add water and stock cube.
- 6
Season to taste.
- 7
Simmer for 10 minutes or until vegetables are soft.
- 8
Blitz with a hand blender.
- 9
Serve topped with chopped parsley.
