Ingredients

  • 2 tbspvegetable oil
  • 1 mediumchopped yellow onion
  • 2 mediumgreen peppers chopped
  • 3 largechopped celery stalks
  • 2 tspkosher salt
  • 1 tspfresh ground pepper
  • 5 cloveminced garlic
  • 6 ozpickled pork (1in cubed)
  • 3bay leaf
  • 1 tspdried tyme and hot sauce
  • 1/2 tspcayenne pepper
  • 2 quartwater
  • 1 lbred kidney beans (rinsed and picked)

Steps

  1. 1

    Add vegtable oil to 7 quart dutch oven over medium heat

  2. 2

    Add onion, bell pepper, celery, salt and pepper to pot.

  3. 3

    Cook, stir frequently until onion and celery are translucent and bell pepper soften. 6 to 8 minutes

  4. 4

    Add garlic and cook 1 additional minute. Stirring constantly

  5. 5

    Add pork, bay leaf, thyme, hot sauce, cayenne, water and beans to pot. Increase heat to high

  6. 6

    Cook, stir frequently until mixture comes to a boil. (Appox 6 to 10 minutes)

  7. 7

    Decrease heat to simmer. Cover. Cook for 1 1/2 hours stirring every 20 minutes

  8. 8

    Uncover, increase heat slightly to maintain a steady simmer

  9. 9

    Continue cooking 40 minutes until beans are tender and sauce is thickened to your liking.
