  • 1 lbbrussels sprouts; destemed, halved
  • 2/3 cupfresh cranberries
  • 1/3 cupgorgonzola cheese; crumbled
  • 1/3 cuppecans; halved
  • 1/3 cupbarley; cooked
  • 1 tbspmaple syrup
  • 1 tbspbalsamic vinegar
  • 1olive oil
  • 1salt and pepper

Steps

  1. 1

    Heat cranberries and brussels sprouts in olive oil.

  2. 2

    Season with salt and pepper.

  3. 3

    Add balsamic vinegar and maple syrup.

  4. 4

    Stir to coat. Remove from heat.

  5. 5

    Toss sprouts, cranberries, barley and pecans in a bowl.

  6. 6

    Top with gorgonzola.

  7. 7

    Serve. Yum!!
