Ingredients

  1. Main Dish
  2. 1 lbCapellini Noodles
  3. 1 lbShrimp (medium) deshelled
  4. 1 tbspExtra Virgin Olive Oil
  5. 5 cloveGarlic *fresh & chopped
  6. 1 cupPortobella Mushrooms, chopped
  7. 1/4 cupSoy Sauce, (low sodium is best)
  8. 2 tbspSesame Seeds
  9. 1/4 cupSesame Oil
  10. 1 tbspBrown Sugar
  11. 3 tbspChutney *jar kind is perfect
  12. 1 cupGreen Onion/Scallions *chopped
  13. 1/2 cupRice Wine Vinegar
  14. Garnish *(optional)
  15. 1/4 cupCrushed Red Pepper
  16. 1 pinchFresh Basil

  1. 1

    Get a large skillet pan or wok and preheat to simmer with olive oil in the pan.

  2. 2

    Start simmering the mushrooms in the oil with the fresh garlic. Simmer until mushroom seem carmalized and garlic appears roasted. Use medium- low medium heat.

  3. 3

    In a seperate pan start boiling water for the capellini noodles and cook them and drain while finishing steps 3-5.

  4. 4

    Add soy sauce, sesame oil, sesame seeds, brown sugar, Chutney, green onions, and rice vinegar to the pan with the mushrooms and garlic. Stir well.

  5. 5

    Simmer all ingredients in pan for 5-7 minitues on low.

  6. 6

    Add your Shrimo to the sauce once it is all simmering and hot, cook 5-8 more minutes on medium to medium low heat. You can remove from heat once the shrimp are pink and curled.

    Add the drained Capelleni noodles to the wok/pan making sure to simmer for a moment and stir to infuse all flavors.

  8. 8

    Serve immediately. Have crushed red pepper and fresh Basil to garnish for optional heat/spice.
