  1. 2 1/2 lbhoney comb tripe
  2. 3 canwhite hominy, large can
  3. 1 packagesmenudo mix, bottle
  4. 2 pinchdried oregano flakes

  1. 1

    cut tripe to small square pieces. wash tripe in hot water. in the sink, let soak for about an hour.

  2. 2

    remove from water. put tripe in a large pot, add water, it should cover about 3/4 of the pot. boil tripe for about 4 hrs until soft.

  3. 3

    once tripe is soft, add menudo mix start with 1/2 a bottle, then more until the red coloring is to your preference.

  4. 4

    add salt, garlic powder, pepper (to your preference), and 2 pinches of dried oregano flakes.

  5. 5

    Boil for about 30 mins - 1hr covered on low heat. add hominy (use as much as u prefer) boil for about another 30 mins -1hr until the hominy really soaks in the red color.

  6. 6

    may serve with:
    cilantro
    lime
    cabbage
    onions
    corn tortillas
