Ingredients

  1. 1red chilli
  2. 6 clovesgarlic
  3. 1 tintomatoes - plum or passata
  4. 2 tbspbalsamic vinegar
  5. 2 portionspasta
  6. Salt
  7. Black pepper
  8. Chilli flakes (optional)

Steps

  1. 1

    Put water on to boil for pasta, and add salt, then dice garlic and chilli

  2. 2

    Fry in olive oil until garlic starts to brown, and put the pasta on

  3. 3

    If using plum tomatoes, crush in your hands to a paste and add to the garlic and chilli. If using passata, add without any crushing, and simmer while the pasta is cooking

  4. 4

    Season with salt and pepper (and chilli flakes) to taste

  5. 5

    Once the pasta is cooked, add it to the sauce and then add balsamic vinegar

  6. 6

    Top with grated Parmesan cheese and serve immediately
