With a very sharp knife, carefully slice open/butterfly each pork chop to accept the stuffing

Grab a 9x13 baking pan, spray with cooking spray

Combine stuffing ingredients in a mixing bowl

Hold pork chop over bowl, fill with stuffing, place in pan

Repeat for remaining chops

Season chops with salt and pepper

Preheat oven to 350

Heat on medium/high 1 Tbsp oil in large skillet

Add chops to hot pan and cook about 3 minutes per side or until well browned

Return to 9x13” pan and bake in oven for about 15-20 minutes or until cooked to desired doneness, 145°-160°

Cover chops loosely with foil and let rest 5 minutes
