mix water and gelatin together and set aside.

in a double boiler add sugar, pumpkin, milk, salt, ginger and cinnamon. bring up temp until hot.

remove from heat. slightly beat egg yolks and add to mixture.

return to double boiler and cook until thick.

allow to cool to room temp.

beat egg whites until stiff and fold into mixture.

add to pie crust and serve.
