Finely chop the lamb fat in a food processor and transfer it to a large mixing bowl.

Soak the bulgur in warm water for about 15 minutes, then drain it well.

Next, chop the onions finely in the food processor (after removing the fat), then squeeze out the excess liquid. Use only the onion pulp for mixing.

In a bowl, combine the lamb fat, ground meat, onion pulp, drained bulgur, chopped parsley, salt, black pepper, and spices. Mix everything thoroughly.

Shape the mixture into kofta logs, making sure they are slightly hollow in the center, and arrange them on a baking sheet.

Pour the reserved onion juice (it will be a bit thick from the fat) over the kofta before baking.

Bake in a preheated oven at high heat for about 20 minutes.

Meanwhile, prepare the grilled salad.

Serve the kofta on top of the salad and enjoy!
